It would seem that the internet hardly needs another recipe for banana bread. Or banana cake. And it isn’t as though bananas and chocolate are a novel combination, for goodness’ sake. But I feel like it is my duty to share this banana cake recipe, even if my message of chocolate banana goodness only reaches one person. Dramatics aside, this cake is worth making. I made it on a whim after I saw something similar on A Pastry Affair, and realized I had 4 very ripe bananas in my fridge.
Ok, last one for this year, I promise. This is the last rhubarb recipe I’m going to send your way for a while. But you’ll miss the rhubarb when it’s gone. This compote is similar to how I remember eating rhubarb as a kid. My grandma would cook it in a small pot with a bit of water and sugar and we’d eat it while it was still warm. My grandma on my Dad’s side is an incredible woman. She managed to raise nine children, keeping them clothed, cared for, and fed. Now, as someone who can regularly be heard raving, “I give up! I! Every once in a while a dessert comes along that makes dessert-eaters out of non-dessert eaters. A confection so delicious that no one can resist it. A treat so tempting that even the staunchest dieter gives in to its charms. Ok, that’s enough of that. Sorry.
All this to say: everyone friggin’ loved this pie. And what’s not to love? Strawberry ice cream, pretzel crust, freshly whipped cream. Think ice cream cake, but with a pretzel crust. And pillows of freshly whipped, lightly sweetened cream. Are you starting to get the picture? This pie didn’t make it long enough for a single drop of ice cream to melt in the pan. A month ago, I gave birth to a baby girl. A month ago. This past month has gone by so fast that I’m feel like I blinked in May and woke up in June. And yesterday, I teared up just a little when I realized my little one’s newborn-sized onesie is getting a bit snug. How did that happen? When did that happen? But I’ve done this before; I know how fast it goes. I think that’s the best thing about having a child the second time around: I’ve given myself permission to just soak it all in an enjoy it. My house is kind of a mess (ok, it’s a total mess) and I’m always behind on laundry, but I sure am enjoying my babies. To me, nothing heralds summer like really good strawberry ice cream. Ice cream is obviously the best summer food there is. (Not open for discussion or dissent, ok? It just is.) And strawberry is the flavor that seems to whisper, excitedly, “Summer is here!”
This recipe for Crème Brûlée Cheesecake is brought to you by the evil genius of my baby brother’s mind. This past year, for this birthday, when I asked him what kind of cake or dessert he’d like to celebrate with, I expected his usual answer. Carrot cake. His favorite. So imagine my surprise when he comes out with, “What about a crème brûlée cheesecake?” Followed by my question, “Is that even a thing?!” And of course, being an evil genius, his response was, “I don’t know… but it should be.” Can’t argue with that logic, folks. Or maybe you can, but I don’t really care to.
I know. I’m sorry. I don’t usually go in for this kind of shenanigans. Ok, well maybe I do. But I really do try to steer clear of such over-the-top silliness (like peanut butter cup bacon whipped cream brownie bars, etc.) Compared to some of the wacky stuff I’ve seen on Pinterest, this is nothing. This isn’t just a chocolate chip cookie.
Let me rephrase that. Saying just a chocolate chip cookie is somewhat disparaging to chocolate chip cookies. A chocolate chip cookie can be the epitome of what a cookie should be. So I’ll say it this way: This isn’t your typical chocolate chip cookie. This cookie is so chock full of chocolate, pecans, and flecks of browned butter that it was all I could do to stop myself from shoving teaspoonfuls of the batter into my already chocolate-stained mouth. Mmm… is there anything better than a hot cup of earl grey tea on a cold day? Oh wait… there is… and it’s that cup of tea, plus chocolate and cream and cocoa. I’m not even a chocolate person (I know, the horror!) and I seriously love these. They are rich and decadent, but also subtle and perfectly balanced. In a season when I tend to go overboard and binge on other sweets, I find myself completely satisfied savoring just one of these. Ok, maybe two. Which is good, because my whole point in making these was to make some tasty homemade gifts for people. But who could blame me for sneaking just a few?
