Chicken Sandwiches with Brie, Spinach, and Thyme-Roasted Tomatoes

Chicken Sandwiches with Brie, Spinach, and Thyme-Roasted TomatoesMarch is a weird month for food.  You’re pretty  much over comfort food, but you still don’t have many options in the way of fresh fruits and vegetables.  The tomatoes still look and taste like pink baseballs, lettuce is still of the pale and limp variety, and zucchinis taste pretty much like air.  There’s just not that much we can do about it. Caramelized Fennel with Goat Cheese

DSC_0195Quick.  Before spring comes in earnest.  Get in all of your comfort-food-eating.  And your cheese-melting. And your warm spice toasting.  Because spring is coming soon and it will be all strawberries and asparagus. I know it’ll be a month or two, or even three (God help us), before I’ll really be enjoying spring produce, but a girl can dream, can’t she?  I mean, the weather forecast for next week promises a day with balmy 47 degree temperatures.  I’m busting out the shorts.

Apple Pandowdy

Apple PandowdyI try to not eat things like skillet apple pie all the time, I swear.  I really do start out with the best intentions.  I go to the store and buy dozens of apples (healthy snacks!), but in the end, they wind up covered in butter and brown sugar and baked under a tender, flaky crust.  Don’t even ask what happens to the bananas.  The universe conspires to make me bake. Mushroom, Spinach, and Walnut Soup

Mushroom, Spinach, and Walnut SoupWhen I friend requested that I come up with a recipe for the soup she loved at one of her favorite restaurants, I was all, “Heck yeah!” I love a good challenge, don’t you?  The real challenge, however, is that this restaurant is in Arizona, where she lives, and I’m, well… in Illinois.  Illinois is in italics there to signify my annoyance that I live here in the cold, while she lives in the beautiful dry heat of the desert. Illinois doesn’t get annoyed italics in the summer, but in February, it certainly does.   [Read more...]

Chocolate Chip Cake

DSC_0385Since I’ve been on such a roll with my old tried-and-true recipes, I figure I might as well just keep on truckin’.  And it doesn’t get much better than this.  This is recipe gold, folks.  Cake.  Chocolate Chips. Cinnamon Sugar.  A big chunk of this with a  cold glass of milk will cure whatever ails you.  (Unless what ails you is sugar addiction. Sorry.) [Read more...]

Corn, Green Chile, and Potato Soup

Corn, Green Chile, and Potato SoupI like to think of myself as adventurous in the kitchen.  Apart from my recent cooking rut, I usually like to try a variety of new recipes, use new ingredients, come up with variations on old recipes.  But there are some things that I always wind up making the same way, over and over again.  Because they’re good, and good is good.  Don’t fix what ain’t broke and all that.  Potato soup was one of those for me.
